Ingredients
- 1 lb of seasoned chicken sausage meat (or ground chicken, or chicken burger patties)
- 8 tortillas, 6–8 inches (preferably corn tortillas)
- Flavorful cheese (such as gouda or smoked cheese) – about 20 grams per taco
- Toppings: chopped onions, lettuce, pickles, etc.
- Dressing : Ranch, Caesar, Wafu, French, etc.
Preparation
- If using plain ground chicken, mix the meat with finely chopped onion and garlic salt. Season with salt and pepper.
- Spread about 80 ml (1/3 cup) of the chicken/sausage mixture onto each tortilla. Press gently to cover the entire surface and help the meat adhere.
- Lightly oil a non-stick pan or a cast iron griddle on the BBQ. Cook the tacos meat-side down for 2 minutes. Press with a spatula to release the meat juices. Flip the tacos and top each one with cheese. Continue cooking for 1 to 2 minutes, or until the meat is fully cooked and the cheese is melted and gooey.
- On warm tortillas, spread the dressing, lettuce and pickles. Fold the tacos and serve immediately.
