Maple Floss «EGGNOG»

Maple Floss

Ingredients Quantities
Eggs (separated) 6
Milk 3 cups
Heavy cream (35%) 1 cup
Maple syrup ¼ cup
Vanilla extract 1 teaspoon
Maple Floss containers (per glass) ¼
Spiced Rum (optional) ¼ cup
Pinch of nutmeg


In a large bowl, beat yolks until thick and pale. Slowly beat in maple syrup. Whisk in the milk, the cream and the vanilla. Mix in the nutmeg and the spiced rum (optional). Cover, and refrigerate for up to 1 day.
Just before serving, beat whites until stiff peaks form. Delicately put egg whites and the Maple Floss on EGGNOG.
