Pork Vindaloo Curry

Pork cubes 2 pounds
White vinegar 1/3 cup
Fresh ginger, minced One 2-inch piece
Tamarind paste 1 tablespoon
Turmeric 1 teaspoon
Cumin seeds 1 teaspoon
Poppy seeds 1 teaspoon
Whole black peppercorns 10
Whole cloves 4
Garlic, minced 8 cloves
Canola oil 1/3 cup
Mustard seeds 1 teaspoon
Cinnamon 1 stick
Onion, chopped 1 large
Water 1¼ cup
Maple syrup 1 teaspoon
Salt To taste

Préparation

Toss pork, salt and vinegar in a bowl. Puree ginger, tamarind paste and turmeric in a food processor and mix in with the pork. Cook cumin, poppy seeds, peppercorns and cloves in a dry skillet until seeds pop. Grind into a powder in spice grinder and add to pork. Cover and chill 4 hours.

Heat oil in a large saucepan on medium-high. Cook mustard seeds and cinnamon until seeds pop, 1-2 minutes. Add onion and cook until slightly caramelized, 8-10 minutes. Stir in pork and marinade and brown meat for 5-7 minutes. Add salt and water. Boil. Reduce to medium-low heat. Cook covered, stirring occasionally until pork is tender, about 1 hour. Add maple syrup before serving.

Delicious on a bed of brown rice with a side of local greens!
